As explained in Workflow Types section, there are 2 types of workflows to select from. You should select it based on your process.
If your process is similar to a lead management workflow where there’s no restrictions on moving items (which we call cards) from one step (WorkHub24 term is stages) to another, then go for the Arbitrary type workflow.
If your process is well structured with rules & conditions and stages are clearly defined with (different) assignees for each stage, then go for a Structured workflow. In this workflow, stage progression happens only if the task of the current stage is marked completed by the assignee. Examples are, document tracking and approval, expense request/approval and application to approval.
